Overview
Wittamer is a chocolatier from Brussels, Belgium. I bought this cake at the Odakyu Shinjuku basement food floor.
I went for the Valentine-only Cool Chocolat and, as often happens in a department-store sweets floor, ended up buying three cakes. Even close to Valentine’s Day, the shop kept restocking while people were waiting.
Sweets
I am not always good with chocolate cakes that lean heavily on liqueur or espresso, but Valentine-season chocolate cakes often use milder milk chocolate and no alcohol. This one was exactly in that comfortable zone.
The heart-shaped chocolate on top is satisfying on its own. The glossy glaze has a deep milk-chocolate aroma, while the mousse inside is smooth and gentle. The ganache is firmer at first, then melts quickly on the tongue.
The cross section was not perfectly cut, but it shows how thoroughly chocolate-forward the cake is: mousse, glaze, ganache, sponge, and cream.
